I've just made my second batch of these!

Spice Cookies

Spice Cookies - original recipe found on Food Network Site with some changes by me!
4 cups all-purpose flour
3 1/2 teaspoons mixed spice
1 1/2 cups butter or margarine, at room temperature
1 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1 glug (about a shot and a half) Mead - I used Lyme Bay Winery Mead

In a large bowl mix flour and spice until blended. I suggest using a fork for this or you will endu up with little clumps of spices

.In another large bowl beat butter the sugar and butter till light and fluffy.

Beat together the egg, vanilla extract and mead and mix into sugar/butter mixture.

Slowly add the flour and spice mix to the liquids mix and beat until well blended.

 Divide dough in thirds; shape into balls, wrap in clingfilm and flatten to about an 1-inch-thick round. Chill for an hour or so.

 Heat oven to 375 degrees F/190 degrees C or G.M.5.

Have baking sheets ready.

On a lightly floured surface roll to approx 1/4 inch and cut the dough keeping unused chilled till needed.

Bake about 12 minutes or until cookies are golden on undersides and edges are just starting to brown.

Cool completely on sheet on wire rack. Ice or decorate if wished!

In a future batch am considering adding orange zest.

They are really easy to make! Its the cutting them out that takes time!

I gave my fella a box of them to take to work to share with his colleagues and he scoffed the lot himself so they are odviously a hit with him!

Recipes are always good :) You need to try my housemate's ginger/toffee/vanilla cake thing sometime. So delicious...
